My mom once gave my Great-Grandmother a journal and asked her to fill it with advice, guidance, prayers, scripture, and memories. She wanted it to be personalized, something she could share with my sister and I and treasure for years to come. My Great-Grandmother was an inspirational woman. She lived a hard life, but she never ceased to give God praise. Her wisdom deserves to be shared, not just within our family, but with anyone who will listen.

My Country Style Steak

1 can mushroom soup
1 pack onion mix

Roll steak in flour and brown on both sides. Mix soup together and two cans water. When it starts to boil good turn down to low and cook at least an hour, more if you can

When I cook a lot of steak I add more soup.

When I want to fry some good chicken, I soak my chicken in buttermilk for an hour, sometimes overnight. Take it out of the buttermilk and roll in flour, salt and pepper. Cook in frying pan until golden brown on low heat. Very good.

Take chicken out of pan and put 3 tablespoons flour in grease and brown in the pan (add salt & pepper) and then put a glass or two of cold water, stir til thickens and have good gravy.

Oven Fried Chicken

1 chicken cut up
Potato chips
melted butter

Dry chicken pieces. Dip in melted butter. Roll in crushed potato chips. Place on foil lined pan and bake at 350° for 1 ½ hours.

Chicken Pot Pie

2 ½ to 3lb. frying chicken - cook until tender.
1 can mushroom soup
½ ts. black pepper
1 cup buttermilk
2 cups of broth from chicken
1 stick margarine melted
1 tsp. salt
1 can Veg. - all - drained

Debone chicken - save broth
Cut chicken in small pieces in a 13x9x1 inch pan
In a sauce pan mix and bring to boil broth and soup.
In another bowl, combine margarine, pepper, salt, flour, and buttermilk. Mix to make a batter - pour broth and soup and veg-all over chicken. Spoon batter over top. Bake at 425° for 25 to 30 minutes.

Very good for Sunday. You can mix and go to church, and cook it when you get home.

Cake with Icing Inside

1 box cake mix
4 eggs
¾ cup oil
1 cup water
1 can of icing
1 teaspoon vanilla

Mix everything except icing and beat with mixer. I beat sugar and oil first then add cake mix and water. When all is mixed I spoon icing and stir it good with a spoon. You can use banana cake mix. You can use chocolate or strawberry. Butternut cake mix is good with pecan icing.

Bake 350° preheated for 30 minutes.

Chocolate Pie

5 egg yolks
1 ½ cups sugar
3 to 4 tablespoons cocoa
6 tablespoons flour
4 cups milk
1 teaspoon vanilla

Beat egg yolks. Mix together the dry ingredients. Add milk and vanilla. Cook over low heat until thick. Put in 2 pie crust. Use whites of eggs for meringue.

I put the flour in the pan with about ½ cup cold water and stir it good on low heat until all the flour is mixed good with no lumps. Then I put cocoa and let it get all mixed with no lumps. Then I add sugar and most of the milk. When it gets hot and starts to get thick then I beat the egg yokes in the rest of the cold milk and add a cup of the hot mixture with it. Then pour it all back and cook slow until it gets thick. If you put the eggs in the hot mix it will scramble them.

Jello Pie

1 carton cool whip
Jello - you can have any kind you like.
Carton yogurt - the kind of jello you use.

Beat with mixer.
Put in 2 graham crust
Chill and serve

I have used Strawberry, Peach, and Banana - all were good and so easy to make.

Chocolate Sheet Cake

2 cups sugar
2 cups self rising flour
1 stick of margarine
½ cup Crisco oil
4 tablespoons cocoa
1 cups water
½ cup buttermilk
2 eggs
1 teaspoon soda
1 teaspoon vanilla

Sift together sugar and flour and put into large mixing bowl. Place margarine, Crisco, and water into saucepan and bring to rapid boil. Pour over flour and sugar mixture, beating well. Mix together buttermilk, eggs, soda, and vanilla and pour into the above mixture and then into a greased and floured 15x10x1 inch pan. Bake at 400° for 20 minutes.

Icing:
1 tsp. vanilla
1 stick margarine (I use Blue Bonnet)
½ cup chopped pecans
4 tablespoons cocoa
6 tbsp. milk (1/3 cup)
1 box confectioners sugar

Start icing 5 minutes before cake is done. Put all ingredients except confectioners sugar into saucepan and bring to boil. Then pour this over one box confectioners sugar and beat well. Remove cake from oven and spread icing on hot cake. Leave in pan. Cut is squares and serve.

I took this cake to work and everybody like it. They called it "Nell Price Cake" Most of them wanted a copy of how to make it.

Fruit Cocktail Cake

2 eggs
2 cups sugar
2 cups self rising flour
1 can fruit cocktail

Mix cake ingredients together. Bake in long pan 40 minutes at 350°

Frosting:
1 stick butter
1 cup sugar
1 cup coconut
½ cup milk
½ cup nuts

Mix all ingredients and pour over top of warm cake. Bake 10 minutes at 350°

Prune Cake

2 cups self rising flour
2 cups sugar
3 eggs
8oz. - 1 jar junior prunes
1 cup chopped nuts
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon allspice (I use apple pie spice)
1 cup salad oil

Beat on medium speed just until well blended, do not over beat. Bake in a 10 inch tube pan that has been greased and lightly floured. Bake 45 minutes in a 350° oven.

Cream Cheese Pound Cake

1 - 8oz. cream cheese
3 - sticks Blue Bonnet Margarine
6 - large eggs
3 - cups sugar
3 - cups cake flour - I use Swan's Down
1 ½ tsp. Vanilla
Pinch of Salt

Let margarine and cream cheese soften. Add sugar and beat thoroughly. Add eggs one at a time. Fold in flour, add vanilla and salt. Bake 1 ½ hours at 325° in a preheated oven.

     When making a cake, always have eggs, butter, and milk at room temperature and sift flour two times. Grease your pan and sprinkle a little flour in it so it won't stick to the pan - no one told me this and I made a mess a lot of times. Mama told me not to jump on the floor or your cake will fall.
